Galinha com Gengibre from Maria Celestina de Mello e Senna.

Prep: 20m | Cook: 30m | Serves: 4 | Easy
1 chicken
½ dried onion, diced
1 spring onion, cut
ginger, sliced
¼ tsp of ground turmeric
1 tbsp Chinese rice wine
a little chopped garlic
Wash the chick and cut it into 8 pieces and season it with salt, pepper and turmeric. Let it stand for some time.
Sauté the onion, dry onion, spring onion and ginger in lard; when golden, add the chicken pieces, then add at least 1½ cups of water and let it cook until the sauce is reduced to 2 tbsp.
Before removing it from the heat, add 1 tbsp of Chinese rice wine.
