Bolinhos de Pinhão

BOLINHOS DE PINHÃO

1½ pounds of sugar;

1½ pounds of pine nuts;

4 egg yolks;

3 ounces of glutinous rice flour;

3 ounces of wheat flour;

4 egg whites, beaten stiff.

Melt the sugar with a little water and keep heating until it reaches the thread stage; mix in the pine nuts without the skin and pass through the machine; add the egg yolks; sift pulu and wheat flour alternately; finally the beaten egg whites, forming a consistent dough.

They are spread out little by little on the paper cut into a frill and put in the oven until cooked. This portion is enough for two dozen cookies.
