GALINHA DE PAPÁ
Chicken casserole (literally, “Dad’s Chicken”)
An easy, popular dish. It can be prepared weeks ahead of a party and frozen. All that has to be done just before the party is to thaw, reheat and add a couple of componenets and it will all be ready to serve.
(Never refreeze anything that has been frozen and then reheated.)

CHICKEN
Chicken pieces (or boneless chicken thighs)
Chopped tomatoes (1 tin)
Champignons (1 tin)
Onions (2 medium)
Oil
Pepper
2 tsp sugar
4 Chicken cubes
½ cup of white wine
Prepare base of pot with oil spray.
Pour some vegetable oil in pot and fry onions on high for approximately one minute. Then add tomatoes, the wine, the chicken cubes and just enough water to just cover the tomatoes and bring to the boil, .
Add the chicken, with the larger pieces at the base.
At this point, the meat can be frozen weeks ahead of time, thawed a day before serving and reheated gently.
Add the champignons and sauce and carefully stir though.
SAUCE
2 hard boiled eggs (yolk only)
2 tsp Worcestershire sauce
1 tbsp olive oil
2 tsp mustard powder
Mash yolks in with two teaspoons of mustard powder. Add one tbsp of olive oil, blend, and 2 tbsp of Worcestershire sauce.
The hard boiled egg whites are chopped up and sprinkled as a garnish.
