Duck or Pork with Pineapple


Duck or Pork with Pineapple from “Guilly” Canavarro Remedios

We have not yet tested this recipe. It is recorded here to allow experimentation and verification.

1 duck or 1 lb | 450g pork
1 tbsp lard
1 pineapple with skin removed and cut into pieces
1 tbsp balichão
2 spring onions, chopped
jagra to taste

Cut tne duck or pork into pieces.

Heat lard, fry the spring onions and balichão for five minutes, add meat and fry well.

Add pineapple and enough water (about 1 cup), boil, add jagra and simmer till all is tender.
