Fried rice noodles with pork

1 pkt rice vermicelli noodles
7oz | 200g Chinese roast pork (cha-siu), sliced thin
6 Chinese sausages (lap cheong), cooked and sliced thin
1 onion cut into half and then into strips
3 eggs, beaten
sliced pickled red ginger
bean sprouts and other vegetables (optional)
a little oil for frying
Boil water, drop in the noodles and cook quickly. Remove the noodles and run under cold water.
Fry the eggs in thin omelettes, cool and then chop them into thin strips.
In a little oil fry the onions with the pork and the sausages for a short time only. Remove from the pan.
Fry the noodles in a little oil and then add ½ of the meats.
Place the noodles on a platter and top with the rest of the meats, egg and ginger (and vegetables if used.)
You can adjust the quantities of meats to your own preference.
