Chicken with Mushrooms

1 large chicken, chopped into pieces

2 scallions (white globe onions), chopped small

1 tbsp sugar

3 cloves of garlic, chopped

¼ bunch shallots, chopped small

9 oz | 250g dried Chinese mushrooms, soaked in hot water

½ cup of soya sauce

½ cup of the juice from the soaked mushrooms

a little oil for frying

Soak the mushrooms in hot water until they soften.

Fry the onions, garlic, shallots in a little oil until the onion softens, then add the chicken pieces and fry until brown all over.

Then add the softened mushrooms, soya sauce and the ½ cup of mushroom liquid.

Bring to a boil, add the sugar, stir and then reduce the flame and simmer until cooked.
