Bifes Recheados from Maria Celestina de Mello e Senna

thinly sliced rump steak
ham
spring onions
diced olives
bread crumbs
1 egg, lightly beaten

Sauté diced spring onions with salt and pepper.
Stuff the steak with chopped olives and ham, pressing the ends carefully with finger-tips so that the filling will not fall out. Coat with flour, beaten egg and bread crumbs. Fry in oil.
Be careful not to have the fire too high or the inside will be raw when the outside is cooked.
This is excellent served with mashed potatoes and a selection of vegetables.
