BEIJINHOS
Rich muffins (Literally, “little kisses”)
Beijinhos from Maria Celestina de Mello e Senna
We have not yet tested this recipe. It is recorded here to allow experimentation and verification.
1 grated coconut
12 oz | 340g sugar
6 oz | 170g pine nuts, roasted and ground
3 oz | 85g of almonds, roasted and crushed
8 egg yolks
Cook the coconut with sugar, using only a little water. When it comes to be boil, mix in the pine nuts and almonds. Remove from the fire and stir in the egg yolks.
Return to the fire and cook until thick. Pour into small ramekin moulds and bake for an hour. (Often it is not necessary to use moulds.)
Makes about 3 dozen beijinhos.
